What you actually eat in seven days: the three sessions, breakfast every morning and the quick meals. You pay more at the till because you buy whole packs — but the surplus rolls into next week, so over time this is the number that counts. The first time you also add … of store-cupboard: oils, vinegar, spices.
Session 1 · Sunday
60 min2 recipes run interleaved. Cooked one after another they would take 105 minutes; interleaved, they come out in 60.
- 0 min Oven on at 220°C. Take the chicken out of the fridge.
- 1 min Cut all the pork belly — the strips for the tray and the ones for the pot. Then the shoulder, into 3 cm cubes.
- 7 min Pot on medium heat, no fat added. Just the pork belly, 8 minutes, until it renders.
- 9 min Cauliflower, onion, garlic and the belly strips into the tray. Melted lard and paprika over everything.
- 13 min Pat the thighs dry, lay them on top, tray into the oven. Forty minutes.
- 15 min High heat, shoulder in beside the belly. Four minutes untouched, turn, three more.
- 22 min Lift the meat onto a plate. Shred the cabbage, slice the onion, round the carrot.
- 29 min Onion and carrot into the rendered fat, 3 minutes, scraping the bottom.
- 32 min Cabbage, spices, vinegar, meat back in, 100 ml water. Lid on, low heat, 22 minutes.
- 54 min Tray out: butter, salt, lemon. Five more minutes in the oven.
- 55 min Lid off, high heat 3 minutes to reduce.
- 58 min Butter and salt into the pot. Divide everything into boxes.

Session 2 · Tuesday
56 min2 recipes run interleaved. Cooked one after another they would take 80 minutes; interleaved, they come out in 56.
- 0 min Oven on at 210°C. Cut the pork belly into 2 cm cubes.
- 5 min Melt the lard. Cauliflower, broccoli and pork cubes straight into the tray, fat over the lot.
- 9 min Tray into the oven — the veg and the pork need a 15-minute head start.
- 11 min Bone the chicken, cut the mushrooms and onion.
- 16 min Grate the onion over the mince, add the egg and spices.
- 20 min Shape 9 meatballs with wet hands.
- 24 min Tray out, meatballs in beside the veg, back for 22 minutes.
- 26 min Brown the mushrooms in lard, don't touch them.
- 32 min Chicken and onion into the same pan.
- 38 min Frozen green beans over the chicken, 3 minutes.
- 41 min Double cream and mustard, low heat, never boiling.
- 47 min Heat off, butter and salt. Done.
- 48 min Tray out, butter and salt over everything.
- 51 min Rest 5 minutes, then divide into boxes.

Session 3 · Friday
58 min3 recipes run interleaved. Cooked one after another they would take 95 minutes; interleaved, they come out in 58.
- 0 min Cube the pork belly and the shoulder. Peppers into wide strips, onion sliced.
- 8 min Pot on medium heat, no fat added. Just the belly, 8 minutes, until it renders.
- 10 min Oven on at 200°C. Courgette in rounds, into the tray with olive oil.
- 16 min High heat, shoulder in beside the belly. Four minutes, turn, three more.
- 23 min Onion, 3 minutes. Off the heat: paprika and garlic.
- 27 min Tomato purée, peppers, bay, 120 ml water. Lid on, low heat, 28 minutes.
- 29 min Melted butter with garlic and lemon. Lay the salmon over the courgette.
- 33 min Salmon into the oven, 12 minutes. Beans at minute 6.
- 36 min Toast the walnuts in a dry pan, 3 minutes. Chop them.
- 40 min Shred the cabbage. Lard in the pan, onion and caraway.
- 45 min Salmon out: butter, salt, lemon, walnuts on top.
- 48 min Cabbage into the pan on high heat, 5 minutes. Then butter and vinegar.
- 55 min Heat off: cream, butter and salt into the stew. Divide everything into boxes.
